Velvety White Cake Recipe

Before chocolate became an inexpensive ingredient available to the public, white cake with chocolate frosting was commonly called Chocolate Cake. Now white cake is filled and frosted with a variety of toppings and great cake to have in the freezer for a quick dessert.

Ingredients

White Cake Batter
• 1/3 cup Mazola
• 1 cup sugar
• 1 tablespoon orange juice
• 1/2 tablespoon lemon juice
• Grated rind 1/2 lemon
• 1/4 teaspoon salt
• 2/3 cup milk
• 1/2 cup Argo or Kingsford's Cornstarch
• 1-1/2 cups bread flour
• 3 teaspoons baking powder
• 3 egg whites

Chocolate Fudge Frosting
• 1/3 cup butter or margarine
• 1/3 cup HERSHEY'S® Cocoa
• 2-2/3 cups powdered sugar
• 1/3 cup milk
• 1 teaspoon vanilla extract

White Cake Batter
Pour the Mazola into a bowl, add the sugar, fruit juices and lemon rind and stir till creamy. Sift together the cornstarch, flour and baking powder, and add alternately with the milk. Gradually fold in the egg whites beaten stiff.

Chocolate Fudge Frosting
Melt butter in small saucepan over low heat; add cocoa, stirring constantly until smooth and slightly thickened. Remove from heat; pour into medium bowl. Cool completely. Add powdered sugar alternately with milk and vanilla, beating to spreading consistency. About 2 cups frosting.

Baking
Bake in a good-sized pan about forty minutes, in a moderately hot oven, 350 to 375 degrees F. The loaf should not be more than two and a half inches thick. Cover with Chocolate Fudge Frosting.
